- 1 cup diced bell pepper
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 tablespoons tomato paste
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup chopped pickles
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned.
- Add onion, celery, and bell pepper, cooking until softened.
- Stir in garlic powder, paprika, salt, and black pepper.
- Add beef broth and bring to a boil, then reduce heat and simmer for 10 minutes.
- Stir in heavy cream, tomato paste, and shredded cheddar cheese, cooking until cheese has melted.
- Serve hot, garnished with chopped pickles if desired.
