- 3 pounds wild boar shoulder
- 2 tablespoons juniper berries
- 1 tablespoon salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup red wine
- 1 tablespoon fresh rosemary, chopped
- 1 onion, quartered
Instructions
- Preheat the oven to 325°F (165°C).
- In a mortar and pestle, crush juniper berries and mix with salt and pepper.
- Rub the mixture over the wild boar shoulder, ensuring it is well covered.
- Heat olive oil in a large oven-safe pot over medium heat. Sear the boar on all sides until browned.
- Add garlic, onion, and rosemary to the pot, stirring for a couple of minutes.
- Pour in the red wine and bring to a simmer.
- Cover the pot and transfer it to the oven. Roast for 3 hours or until the meat is tender.
- Let the roast rest for 15 minutes before slicing and serving.

- Serve with roasted vegetables or mashed potatoes for a complete meal.
