Description

A flavorful and aromatic roast made with wild boar and juniper berries, perfect for special occasions.


Ingredients

  • 3 pounds wild boar shoulder
  • 2 tablespoons juniper berries
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup red wine
  • 1 tablespoon fresh rosemary, chopped
  • 1 onion, quartered


Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a mortar and pestle, crush juniper berries and mix with salt and pepper.
  3. Rub the mixture over the wild boar shoulder, ensuring it is well covered.
  4. Heat olive oil in a large oven-safe pot over medium heat. Sear the boar on all sides until browned.
  5. Add garlic, onion, and rosemary to the pot, stirring for a couple of minutes.
  6. Pour in the red wine and bring to a simmer.
  7. Cover the pot and transfer it to the oven. Roast for 3 hours or until the meat is tender.
  8. Let the roast rest for 15 minutes before slicing and serving.
