- 2 kg wild boar roast
- 20 juniper berries
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 cup red wine
- 1 cup vegetable broth
Instructions
- Preheat your oven to 160°C (320°F).
- In a mortar and pestle, crush the juniper berries.
- Mix olive oil, garlic, rosemary, thyme, crushed juniper berries, salt, and pepper in a bowl.
- Rub the mixture all over the wild boar roast.
- In a large ovenproof pot, heat some oil over medium heat and sear the roast until browned on all sides.
- Pour red wine and vegetable broth into the pot.
- Cover the pot and transfer it to the oven.
- Cook for approximately 2.5 to 3 hours, or until the meat is fork-tender.
- Let the roast rest for 15 minutes before slicing.
Notes
- For best flavor, marinate the roast in the seasoning for several hours or overnight.
- Serve with roasted vegetables or a hearty side dish.
