Description

A deliciously savory roast featuring wild boar, enhanced with the aromatic flavors of juniper berries.


Ingredients

  • 2 kg wild boar roast
  • 20 juniper berries
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup red wine
  • 1 cup vegetable broth


Instructions

  1. Preheat your oven to 160°C (320°F).
  2. In a mortar and pestle, crush the juniper berries.
  3. Mix olive oil, garlic, rosemary, thyme, crushed juniper berries, salt, and pepper in a bowl.
  4. Rub the mixture all over the wild boar roast.
  5. In a large ovenproof pot, heat some oil over medium heat and sear the roast until browned on all sides.
  6. Pour red wine and vegetable broth into the pot.
  7. Cover the pot and transfer it to the oven.
  8. Cook for approximately 2.5 to 3 hours, or until the meat is fork-tender.
  9. Let the roast rest for 15 minutes before slicing.

Notes

  • For best flavor, marinate the roast in the seasoning for several hours or overnight.
  • Serve with roasted vegetables or a hearty side dish.
