Description

This flavorful juniper berry and wild boar roast is perfect for a special occasion or feast, bringing together fragrant spices and rich meats.


Ingredients

  • 2 pounds wild boar shoulder
  • 1 tablespoon crushed juniper berries
  • 3 cloves garlic, minced
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup red wine
  • 2 tablespoons olive oil
  • 1 large onion, sliced


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a small bowl, mix together juniper berries, garlic, rosemary, black pepper, and salt.
  3. Rub the mixture over the wild boar shoulder.
  4. In a large oven-safe pot, heat olive oil over medium heat. Sear the boar on all sides until browned.
  5. Add the onion and red wine to the pot.
  6. Cover and roast in the preheated oven for 3-4 hours, or until the meat is tender.
  7. Remove from oven and let rest before slicing.
