- 2 pounds wild boar shoulder
- 1 tablespoon crushed juniper berries
- 3 cloves garlic, minced
- 2 teaspoons fresh rosemary, chopped
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 cup red wine
- 2 tablespoons olive oil
- 1 large onion, sliced
Instructions
- Preheat the oven to 325°F (160°C).
- In a small bowl, mix together juniper berries, garlic, rosemary, black pepper, and salt.
- Rub the mixture over the wild boar shoulder.
- In a large oven-safe pot, heat olive oil over medium heat. Sear the boar on all sides until browned.
- Add the onion and red wine to the pot.
- Cover and roast in the preheated oven for 3-4 hours, or until the meat is tender.
- Remove from oven and let rest before slicing.
