Ingredients

- 1 rack of lamb
- 2 tablespoons tallow
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon mustard
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix together the tallow, garlic, rosemary, thyme, mustard, salt, and black pepper.
- Rub the mixture all over the rack of lamb.
- Place the rack in a roasting pan and roast in the oven for about 20-25 minutes for medium-rare.
- Remove from oven and let rest for 10 minutes before slicing.
