Description

Succulent Cornish hens roasted to perfection with a savory thyme butter, perfect for any special occasion.


Ingredients

  • 2 Cornish hens
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, quartered
  • 1 cup chicken broth


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix the softened butter with thyme, garlic, salt, and pepper.
  3. Gently loosen the skin of the hens and spread the thyme butter underneath.
  4. Stuff the cavity of each hen with lemon quarters.
  5. Place the hens in a roasting pan and pour chicken broth around them.
  6. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).
  7. Let the hens rest for 10 minutes before serving.

Notes

  • Make sure to let the hens rest before carving to keep the juices in.
  • For an added flavor, you can marinate the hens overnight in the thyme butter.
