- 2 Cornish hens
- 1/2 cup unsalted butter, softened
- 2 tablespoons fresh thyme, chopped
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, quartered
- 1 cup chicken broth
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, mix the softened butter with thyme, garlic, salt, and pepper.
- Gently loosen the skin of the hens and spread the thyme butter underneath.
- Stuff the cavity of each hen with lemon quarters.
- Place the hens in a roasting pan and pour chicken broth around them.
- Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C).
- Let the hens rest for 10 minutes before serving.
Notes
- Make sure to let the hens rest before carving to keep the juices in.
- For an added flavor, you can marinate the hens overnight in the thyme butter.
