- 1 pound chicken thigh, boneless and skinless
- 1 bunch green onions (leeks), cut into 2-inch sections
- 2 tablespoons yuzu kosho
- 2 tablespoons soy sauce
- 1 tablespoon sake
- 1 tablespoon mirin
- 1 tablespoon vegetable oil
Instructions
- Cut the chicken into bite-sized pieces and thread onto skewers, alternating with green onion sections.
- In a bowl, mix yuzu kosho, soy sauce, sake, and mirin.
- Brush the skewers with the marinade and let sit for 30 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Cook the skewers for about 10-15 minutes, turning occasionally and basting with more marinade.
- Once cooked through, serve hot with additional yuzu kosho on the side.

- Marinating the chicken enhances the flavor.
- Adjust yuzu kosho amount to taste as it can be quite spicy.
