Description

A classic Japanese dish featuring grilled chicken skewers with leeks served with a tangy yuzu kosho sauce.


Ingredients

  • 1 pound chicken thigh, boneless and skinless
  • 1 bunch green onions (leeks), cut into 2-inch sections
  • 2 tablespoons yuzu kosho
  • 2 tablespoons soy sauce
  • 1 tablespoon sake
  • 1 tablespoon mirin
  • 1 tablespoon vegetable oil


Instructions

  1. Cut the chicken into bite-sized pieces and thread onto skewers, alternating with green onion sections.
  2. In a bowl, mix yuzu kosho, soy sauce, sake, and mirin.
  3. Brush the skewers with the marinade and let sit for 30 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Cook the skewers for about 10-15 minutes, turning occasionally and basting with more marinade.
  6. Once cooked through, serve hot with additional yuzu kosho on the side.
