Description

A flavorful, spicy Jamaican dish featuring marinated chicken thighs cooked until tender and juicy.


Ingredients

  • 6 chicken thighs
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 lime, juiced
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon brown sugar


Instructions

  1. In a large bowl, mix the jerk seasoning, olive oil, lime juice, garlic, salt, black pepper, cayenne pepper, and brown sugar.
  2. Add the chicken thighs to the marinade, ensuring they are well coated.
  3. Cover and refrigerate for at least 1 hour, preferably overnight.
  4. Preheat the grill to medium-high heat.
  5. Grill the chicken thighs for about 6-8 minutes on each side or until they reach an internal temperature of 165°F.
  6. Remove from the grill and let rest for 5 minutes before serving.

Notes

  • For extra heat, add more cayenne pepper.
  • Serve with rice and peas for a traditional meal.
