- 6 chicken thighs
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 lime, juiced
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 tablespoon brown sugar
Instructions
- In a large bowl, mix the jerk seasoning, olive oil, lime juice, garlic, salt, black pepper, cayenne pepper, and brown sugar.
- Add the chicken thighs to the marinade, ensuring they are well coated.
- Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat the grill to medium-high heat.
- Grill the chicken thighs for about 6-8 minutes on each side or until they reach an internal temperature of 165°F.
- Remove from the grill and let rest for 5 minutes before serving.
Notes
- For extra heat, add more cayenne pepper.
- Serve with rice and peas for a traditional meal.
