Description
Chelo Kebab is a traditional Iranian dish made of grilled meat served with saffron rice.
Ingredients

- 4 cups basmati rice
- 2 pounds ground lamb or beef
- 1 large onion, grated
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon saffron threads
- 2 tablespoons butter
Instructions
- Soak the rice in water for at least 1 hour.
- Mix the ground meat with grated onion, salt, and pepper. Form into skewers.
- Grill the skewers over medium heat until cooked through.
- Prepare the saffron by dissolving it in warm water.
- Cook the rice in a large pot until fluffy and drain.
- Serve the kebabs over the rice, drizzled with saffron water and melted butter.
Notes
- For best flavor, let the meat mixture sit for at least 30 minutes before grilling.
- Serve with grilled tomatoes and a side of yogurt.
