Description

Chelo Kebab is a traditional Iranian dish made of grilled meat served with saffron rice.


Ingredients

  • 4 cups basmati rice
  • 2 pounds ground lamb or beef
  • 1 large onion, grated
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon saffron threads
  • 2 tablespoons butter


Instructions

  1. Soak the rice in water for at least 1 hour.
  2. Mix the ground meat with grated onion, salt, and pepper. Form into skewers.
  3. Grill the skewers over medium heat until cooked through.
  4. Prepare the saffron by dissolving it in warm water.
  5. Cook the rice in a large pot until fluffy and drain.
  6. Serve the kebabs over the rice, drizzled with saffron water and melted butter.

Notes

  • For best flavor, let the meat mixture sit for at least 30 minutes before grilling.
  • Serve with grilled tomatoes and a side of yogurt.
