Ingredients

Instructions
- Preheat sous vide water bath to 123°F (51°C).
- Season scallops with salt, pepper, and thyme.
- Place scallops in a vacuum-sealable bag with butter and lemon juice, then seal the bag.
- Submerge the bag in the water bath and cook for 30-40 minutes.
- Remove scallops from the bag and pat dry.
- Heat a skillet over high heat and sear scallops for 1-2 minutes per side until golden brown.
- Serve immediately.
