Delicious and savory birria made easily in an Insta Pot.
Ingredients

- 2 pounds beef chuck roast
- 1 onion chopped
- 4 cloves garlic minced
- 3 dried guajillo peppers
- 2 dried ancho peppers
- 1 tablespoon cumin
- 1 tablespoon oregano
- 4 cups beef broth
- 2 tablespoons apple cider vinegar
- Salt to taste
Instructions
- Prepare the dried peppers by removing seeds and stems.
- Sauté onion and garlic until soft in the Insta Pot.
- Add beef and spices, along with the broth and vinegar.
- Seal the Insta Pot and cook on high pressure for 45 minutes.
- Let the pressure release naturally, then shred the beef.
- Serve in tacos or with rice.

- You can adjust the level of spice by adding or removing peppers.
