Description

Rogan Josh is a flavorful and aromatic dish from India, made with tender lamb or goat cooked in a rich and spicy sauce.


Ingredients

  • 2 pounds lamb or goat, cut into chunks
  • 3 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 teaspoons garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup plain yogurt
  • 1 teaspoon salt (adjust to taste)
  • 1 cup water
  • 2 tablespoons chopped fresh cilantro, for garnish


Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until they are golden brown.
  3. Add minced garlic and grated ginger, and cook for another minute.
  4. Stir in garam masala, ground coriander, ground cumin, paprika, and red chili powder, and cook for a few minutes until fragrant.
  5. Add the lamb or goat chunks, season with salt, and brown on all sides.
  6. Pour in the crushed tomatoes and yogurt, mixing well.
  7. Add water and bring to a boil.
  8. Reduce heat to low, cover, and simmer for about 1.5 to 2 hours, or until the meat is tender.
  9. Adjust seasoning if necessary and garnish with chopped cilantro before serving.
