- 2 pounds lamb or goat, cut into chunks
- 3 tablespoons vegetable oil
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 teaspoons garam masala
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon red chili powder (adjust to taste)
- 1 can (14 ounces) crushed tomatoes
- 1 cup plain yogurt
- 1 teaspoon salt (adjust to taste)
- 1 cup water
- 2 tablespoons chopped fresh cilantro, for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and sauté until they are golden brown.
- Add minced garlic and grated ginger, and cook for another minute.
- Stir in garam masala, ground coriander, ground cumin, paprika, and red chili powder, and cook for a few minutes until fragrant.
- Add the lamb or goat chunks, season with salt, and brown on all sides.
- Pour in the crushed tomatoes and yogurt, mixing well.
- Add water and bring to a boil.
- Reduce heat to low, cover, and simmer for about 1.5 to 2 hours, or until the meat is tender.
- Adjust seasoning if necessary and garnish with chopped cilantro before serving.
Notes
- Serving with basmati rice or naan enhances the dish.
- This dish can be made a day ahead as the flavors improve when it sits overnight.
