Description

A hearty and flavorful pie made with tender beef, vegetables, and a rich Guinness beer gravy, encased in a flaky pastry.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 tablespoons olive oil
  • 2 onions, chopped
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 tablespoon tomato paste
  • 1 cup beef broth
  • 1 can Guinness beer
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons flour
  • 1 package puff pastry
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large pot, heat olive oil over medium heat and brown the beef cubes. Remove and set aside.
  3. Add onions, carrots, and garlic to the pot, cooking until softened.
  4. Stir in thyme, tomato paste, and flour, cooking for another minute.
  5. Add the beef back to the pot, pour in the Guinness, beef broth, and Worcestershire sauce. Simmer for 1.5 hours until beef is tender.
  6. Let the filling cool slightly, then transfer to a pie dish.
  7. Roll out the puff pastry and cover the filling, sealing the edges. Cut slits in the top for steam.
  8. Brush with beaten egg and bake for 30-35 minutes until golden brown.

Notes

  • For extra flavor, marinate the beef in Guinness overnight.
  • Serve with mashed potatoes or a side salad.
