A hearty and flavorful pie made with tender beef, vegetables, and a rich Guinness beer gravy, encased in a flaky pastry.

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 tablespoons olive oil
- 2 onions, chopped
- 2 carrots, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 tablespoon tomato paste
- 1 cup beef broth
- 1 can Guinness beer
- 1 tablespoon Worcestershire sauce
- 2 tablespoons flour
- 1 package puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large pot, heat olive oil over medium heat and brown the beef cubes. Remove and set aside.
- Add onions, carrots, and garlic to the pot, cooking until softened.
- Stir in thyme, tomato paste, and flour, cooking for another minute.
- Add the beef back to the pot, pour in the Guinness, beef broth, and Worcestershire sauce. Simmer for 1.5 hours until beef is tender.
- Let the filling cool slightly, then transfer to a pie dish.
- Roll out the puff pastry and cover the filling, sealing the edges. Cut slits in the top for steam.
- Brush with beaten egg and bake for 30-35 minutes until golden brown.
Notes
- For extra flavor, marinate the beef in Guinness overnight.
- Serve with mashed potatoes or a side salad.
