Description

Ingredients

  • 1 rack of lamb
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 cup fresh herbs (parsley, rosemary, thyme), chopped
  • 1/2 cup breadcrumbs
  • 4 ounces prosciutto, sliced
  • Salt and pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the olive oil, garlic, and Dijon mustard.
  3. Coat the rack of lamb with the mixture and season with salt and pepper.
  4. Press the herbs and breadcrumbs onto the lamb to create a crust.
  5. Place the lamb on a baking sheet and roast for about 25 minutes for medium-rare.
  6. In the last 10 minutes, add the prosciutto slices on top.
  7. Remove from oven and let rest for 10 minutes before slicing.
  8. Serve and enjoy!
