Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the olive oil, garlic, and Dijon mustard.
- Coat the rack of lamb with the mixture and season with salt and pepper.
- Press the herbs and breadcrumbs onto the lamb to create a crust.
- Place the lamb on a baking sheet and roast for about 25 minutes for medium-rare.
- In the last 10 minutes, add the prosciutto slices on top.
- Remove from oven and let rest for 10 minutes before slicing.
- Serve and enjoy!
