Ingredients

- 2 pounds elk roast
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the olive oil, garlic, rosemary, thyme, salt, and black pepper.
- Rub the mixture all over the elk roast.
- In a hot skillet, sear the roast on all sides until browned.
- Transfer the roast to a roasting pan.
- Combine the beef broth and Worcestershire sauce, then pour around the roast.
- Roast in the oven for 1 hour or until the internal temperature reaches 130°F (54°C) for medium-rare.
- Let the roast rest for 10-15 minutes before slicing.
