Description

A flavorful and succulent herb-crusted elk roast served with a rich garlic jus.


Ingredients

  • 2 pounds elk roast
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the olive oil, garlic, rosemary, thyme, salt, and black pepper.
  3. Rub the mixture all over the elk roast.
  4. In a hot skillet, sear the roast on all sides until browned.
  5. Transfer the roast to a roasting pan.
  6. Combine the beef broth and Worcestershire sauce, then pour around the roast.
  7. Roast in the oven for 1 hour or until the internal temperature reaches 130°F (54°C) for medium-rare.
  8. Let the roast rest for 10-15 minutes before slicing.
