Description

Deliciously grilled sweetbreads served with a zesty lemon-butter drizzle for a delightful meal.


Ingredients

  • 1 pound sweetbreads
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 2 lemons, zest and juice
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Soak the sweetbreads in cold water for 2 hours, changing the water occasionally.
  2. Blanch sweetbreads in boiling water for 5 minutes, then cool in ice water.
  3. Remove the membranes and any impurities from the sweetbreads.
  4. Heat olive oil in a grill pan over medium heat and grill sweetbreads until golden brown, about 5-7 minutes per side.
  5. For the lemon-butter drizzle, melt butter in a saucepan, add lemon zest and juice, and stir.
  6. Season sweetbreads with salt and pepper, then drizzle with lemon-butter before serving.
