Ingredients

- 1 pound sweetbreads
- 2 tablespoons olive oil
- 3 tablespoons butter
- 2 lemons, zest and juice
- Salt to taste
- Black pepper to taste
Instructions
- Soak the sweetbreads in cold water for 2 hours, changing the water occasionally.
- Blanch sweetbreads in boiling water for 5 minutes, then cool in ice water.
- Remove the membranes and any impurities from the sweetbreads.
- Heat olive oil in a grill pan over medium heat and grill sweetbreads until golden brown, about 5-7 minutes per side.
- For the lemon-butter drizzle, melt butter in a saucepan, add lemon zest and juice, and stir.
- Season sweetbreads with salt and pepper, then drizzle with lemon-butter before serving.
