- 1 pound golden goose liver
- 1 cup heavy cream
- 2 shallots, finely chopped
- 1/2 cup white wine
- 3 tablespoons butter
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1/2 teaspoon nutmeg
- 4 tablespoons brandy
Instructions
- In a skillet, melt the butter and sauté the shallots until translucent.
- Add the golden goose liver and cook until browned.
- Pour in the white wine and cook until reduced.
- Add in the heavy cream, salt, pepper, and nutmeg, and simmer for a few minutes.
- Blend the mixture until smooth.
- Stir in the brandy and pour into serving dishes.
- Chill in the refrigerator for at least 2 hours before serving.
