Ingredients

  • 1 pound golden goose liver
  • 1 cup heavy cream
  • 2 shallots, finely chopped
  • 1/2 cup white wine
  • 3 tablespoons butter
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 4 tablespoons brandy


Instructions

  1. In a skillet, melt the butter and sauté the shallots until translucent.
  2. Add the golden goose liver and cook until browned.
  3. Pour in the white wine and cook until reduced.
  4. Add in the heavy cream, salt, pepper, and nutmeg, and simmer for a few minutes.
  5. Blend the mixture until smooth.
  6. Stir in the brandy and pour into serving dishes.
  7. Chill in the refrigerator for at least 2 hours before serving.
