- 2 ribeye steaks
- 2 carrots, grated
- 1/2 cup walnuts, chopped
- 1/4 cup fresh dill, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Season the steaks with salt, pepper, and minced garlic.
- Grill the steaks to desired doneness, approximately 5 minutes per side for medium-rare.
- While the steak is cooking, in a large bowl, combine grated carrots, walnuts, dill, olive oil, and balsamic vinegar.
- Toss the salad mixture until well combined.
- Once the steak is cooked, let it rest for 5 minutes before slicing it against the grain.
- Serve the sliced steak over the carrot salad.
Notes
- For a spicier kick, add red pepper flakes to the steaks before grilling.
- Let the salad sit for a few minutes before serving to allow the flavors to meld.
