- 2 large eggs, beaten
- 1 cup panko breadcrumbs

- 1/2 cup sweet chili sauce
- 1 tablespoon lime juice
- 1 tablespoon lime zest
- 1 tablespoon fresh cilantro, chopped
Instructions
- Preheat oven to 400°F (200°C).
- In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant.
- Set up a breading station: one bowl with flour, another with beaten eggs, and a third with panko breadcrumbs mixed with salt and pepper.
- Dip each cod strip into flour, then eggs, and finally coat with panko breadcrumbs.
- Place cod strips on a baking sheet lined with parchment paper.
- Drizzle garlic butter over the strips.
- Bake for 15-20 minutes or until golden brown and cooked through.
- In a small bowl, mix sweet chili sauce, lime juice, lime zest, and chopped cilantro.
- Serve cod strips with the sweet chili lime sauce.

- For extra flavor, let the cod strips marinate in the garlic butter for 30 minutes before breading.
