Description

Delicious and crispy garlic butter cod strips paired with a sweet chili lime sauce, perfect as an appetizer or main dish.


Ingredients

  • 1 pound cod fillets, cut into strips
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sweet chili sauce
  • 1 tablespoon lime juice
  • 1 tablespoon lime zest
  • 1 tablespoon fresh cilantro, chopped


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant.
  3. Set up a breading station: one bowl with flour, another with beaten eggs, and a third with panko breadcrumbs mixed with salt and pepper.
  4. Dip each cod strip into flour, then eggs, and finally coat with panko breadcrumbs.
  5. Place cod strips on a baking sheet lined with parchment paper.
  6. Drizzle garlic butter over the strips.
  7. Bake for 15-20 minutes or until golden brown and cooked through.
  8. In a small bowl, mix sweet chili sauce, lime juice, lime zest, and chopped cilantro.
  9. Serve cod strips with the sweet chili lime sauce.

Notes

  • For extra flavor, let the cod strips marinate in the garlic butter for 30 minutes before breading.
