- 2 cups cooked rice
- 1 pound ground beef
- 1 cup frozen peas and carrots
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, sliced
- 1 teaspoon minced garlic
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add ground beef and cook until browned.
- Add garlic and vegetables; sauté for about 3 minutes.
- Push the mixture to one side of the skillet and scramble the eggs on the other side.
- Once eggs are cooked, mix everything together.
- Add cooked rice and soy sauce; stir well to combine.
- Cook for an additional 3-5 minutes, stirring occasionally.
- Remove from heat and garnish with green onions.

- Feel free to use leftover rice for better texture.
