- 1 whole goose (about 10-12 pounds)
- 4 tablespoons duck fat
- 2 oranges, quartered
- 1 onion, quartered
- 4 garlic cloves, smashed
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
Instructions
- Preheat oven to 325°F (165°C).
- Remove the giblets from the goose and pat it dry with paper towels. Score the skin in a diamond pattern.
- Rub the duck fat all over the goose, then season with salt and pepper.
- Stuff the cavity with oranges, onion, and garlic.
- Place the goose on a roasting rack in a roasting pan. Roast in the preheated oven for about 2 to 2.5 hours, basting occasionally, until the internal temperature reaches 170°F (77°C).
- Let the goose rest for 20 minutes before carving.
Notes
- For extra crispy skin, increase the oven temperature to 400°F (200°C) for the last 30 minutes of cooking.
- Save the rendered duck fat for roasting vegetables or frying.
