Celebrate the holiday season with this rich and delicious roast goose, enhanced by duck fat for an unparalleled flavor.


Ingredients

Scale
  • 1 whole goose (about 10-12 pounds)
  • 4 tablespoons duck fat
  • 2 oranges, quartered
  • 1 onion, quartered
  • 4 garlic cloves, smashed
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary


Instructions

  1. Preheat oven to 325°F (165°C).
  2. Remove the giblets from the goose and pat it dry with paper towels. Score the skin in a diamond pattern.
  3. Rub the duck fat all over the goose, then season with salt and pepper.
  4. Stuff the cavity with oranges, onion, and garlic.
  5. Place the goose on a roasting rack in a roasting pan. Roast in the preheated oven for about 2 to 2.5 hours, basting occasionally, until the internal temperature reaches 170°F (77°C).
  6. Let the goose rest for 20 minutes before carving.

Notes

  • For extra crispy skin, increase the oven temperature to 400°F (200°C) for the last 30 minutes of cooking.
