Description

A delicious roast that combines the tangy flavor of fermented cabbage with the richness of lard.


Ingredients

Scale
  • 2 pounds lard
  • 1 head fermented cabbage
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 4 cloves garlic, minced


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a roasting pan, layer the fermented cabbage at the bottom.
  3. Rub the lard with salt, pepper, and minced garlic.
  4. Place the seasoned lard on top of the cabbage.
  5. Cover the pan with foil and roast in the oven for 2 hours.
  6. Remove the foil and roast for an additional 30 minutes to brown the top.
  7. Let it rest for 10 minutes before slicing and serving.

  • This dish is best served with hearty bread.
