- 2 teaspoons sugar
- 1/4 cup white vinegar
- 1/4 teaspoon starter culture (optional)
Instructions
- In a large bowl, mix together ground beef, pork fat, kosher salt, black pepper, garlic powder, onion powder, paprika, curing salt, sugar, white vinegar, and starter culture until well combined.
- Pack the mixture tightly into sausage casings or form into nuggets.
- Place in a cool, dark area to ferment for several days.
- Once fermented, dry the nuggets in a dehydrator or in an oven on a low setting until firm.
- Store in an airtight container in the fridge.
