Description

Deliciously tangy and flavorful fermented beef salami nuggets perfect for snacking or adding to your favorite dishes.


Ingredients

  • 2 pounds ground beef
  • 1 pound pork fat
  • 3 tablespoons kosher salt
  • 2 teaspoons black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon paprika
  • 1 cup beef broth
  • 1 teaspoon curing salt
  • 2 teaspoons sugar
  • 1/4 cup white vinegar
  • 1/4 teaspoon starter culture (optional)


Instructions

  1. In a large bowl, mix together ground beef, pork fat, kosher salt, black pepper, garlic powder, onion powder, paprika, curing salt, sugar, white vinegar, and starter culture until well combined.
  2. Pack the mixture tightly into sausage casings or form into nuggets.
  3. Place in a cool, dark area to ferment for several days.
  4. Once fermented, dry the nuggets in a dehydrator or in an oven on a low setting until firm.
  5. Store in an airtight container in the fridge.
