Description

A rich and flavorful Egg Yolk Confit, preserved in aromatic beef tallow.


Ingredients

  • 1 cup beef tallow
  • 1 teaspoon salt
  • 1 teaspoon fresh thyme
  • 1 clove garlic, smashed


Instructions

  1. Preheat your oven to 200°F (93°C).
  2. In a small saucepan, melt beef tallow over low heat.
  3. Place the egg yolks gently into a small baking dish.
  4. Pour melted tallow over the yolks, ensuring they are fully submerged.
  5. Add salt, thyme, and garlic to the dish.
  6. Bake in the preheated oven for about 1 hour, until yolks are set but still tender.
  7. Let cool, then store in the fridge.
