Description

These Easy Turkey Enchiladas Verdes are a quick and delicious way to enjoy a classic Mexican dish, packed with flavor and nutrition.


Ingredients

  • 1 pound ground turkey
  • 1 cup green enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, drained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
  3. Add ground turkey, cumin, chili powder, and salt; cook until turkey is no longer pink.
  4. Stir in black beans, corn, and half of the enchilada sauce. Remove from heat.
  5. In a baking dish, spread a thin layer of enchilada sauce. Fill each tortilla with the turkey mixture, roll them up, and place seam side down in the dish.
  6. Pour remaining enchilada sauce over the top and sprinkle with cheese.
  7. Bake for 20-25 minutes, or until cheese is melted and bubbly.

  • You can substitute ground beef or chicken for the turkey.
