- 1 pound ground turkey
- 1 cup green enchilada sauce
- 1 cup shredded cheese
- 8 corn tortillas
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, drained
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
- Add ground turkey, cumin, chili powder, and salt; cook until turkey is no longer pink.
- Stir in black beans, corn, and half of the enchilada sauce. Remove from heat.
- In a baking dish, spread a thin layer of enchilada sauce. Fill each tortilla with the turkey mixture, roll them up, and place seam side down in the dish.
- Pour remaining enchilada sauce over the top and sprinkle with cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
Notes
- For added flavor, top with fresh cilantro and avocado before serving.
- You can substitute ground beef or chicken for the turkey.
