Ingredients

- 4 ears fresh corn on the cob
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 cup cotija cheese, crumbled
- 1/4 cup mayonnaise
- 2 avocados, mashed
- 8 small corn tortillas
- 1/4 cup fresh cilantro, chopped
Instructions
- Grill the corn on the cob until charred and tender, about 10 minutes.
- Let cool, then cut the kernels off the cob into a bowl.
- Add olive oil, chili powder, garlic powder, and salt to the corn; mix well.
- Mix in cotija cheese and mayonnaise.
- In a separate bowl, mash avocados and season to taste.
- Warm tortillas in a skillet or microwave.
- Assemble tacos by spooning corn mixture and mashed avocado onto each tortilla.
- Top with chopped cilantro and serve immediately.
Notes
- For extra flavor, you can add lime juice to the corn mixture.
- These tacos can be served with hot sauce for some added heat.
