Delicious and easy-to-make tacos featuring a street corn-inspired filling that is perfect for any taco night.


Ingredients

  • 4 ears fresh corn on the cob
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 avocados, mashed
  • 8 small corn tortillas
  • 1/4 cup fresh cilantro, chopped


Instructions

  1. Grill the corn on the cob until charred and tender, about 10 minutes.
  2. Let cool, then cut the kernels off the cob into a bowl.
  3. Add olive oil, chili powder, garlic powder, and salt to the corn; mix well.
  4. Mix in cotija cheese and mayonnaise.
  5. In a separate bowl, mash avocados and season to taste.
  6. Warm tortillas in a skillet or microwave.
  7. Assemble tacos by spooning corn mixture and mashed avocado onto each tortilla.
  8. Top with chopped cilantro and serve immediately.

Notes
