Description

A hearty and comforting soup made with ham and beans that’s perfect for any day!


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 cup diced ham
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked white beans
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 bay leaf
  • 2 cups chopped kale or spinach


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the ham, onion, and garlic; sauté until the onion is translucent.
  2. Pour in the chicken broth, and bring to a simmer.
  3. Add the cooked beans, thyme, pepper, and bay leaf. Simmer for 20 minutes.
  4. Stir in the kale or spinach and cook until wilted.
  5. Remove the bay leaf before serving.

Notes

  • Feel free to add more vegetables, like carrots or celery, for additional flavor.
  • Store leftovers in the refrigerator for up to 3 days.
