A hearty and comforting soup made with ham and beans that’s perfect for any day!
Ingredients

- 1 tablespoon olive oil
- 1 cup diced ham
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked white beans
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1 bay leaf
- 2 cups chopped kale or spinach
Instructions
- In a large pot, heat the olive oil over medium heat. Add the ham, onion, and garlic; sauté until the onion is translucent.
- Pour in the chicken broth, and bring to a simmer.
- Add the cooked beans, thyme, pepper, and bay leaf. Simmer for 20 minutes.
- Stir in the kale or spinach and cook until wilted.
- Remove the bay leaf before serving.
Notes
- Feel free to add more vegetables, like carrots or celery, for additional flavor.
- Store leftovers in the refrigerator for up to 3 days.
