- 2 large egg yolks
- 1/4 cup erythritol (or sweetener of choice)
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a saucepan, heat the heavy cream over medium heat until it begins to steam.
- In a separate bowl, whisk the egg yolks, erythritol, vanilla extract, and salt until well combined.
- Slowly pour the hot cream into the egg mixture while whisking continuously.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens.
- Remove from heat and pour into serving dishes. Chill before serving.

- This pudding can be stored in the refrigerator for up to 3 days.
