Description

Easy Armadillo Eggs are a delicious twist on traditional jalapeño poppers, featuring a flavorful sausage filling and wrapped in bacon.


Ingredients

  • 12 jalapeño peppers
  • 1 pound breakfast sausage
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 pound bacon


Instructions

  1. Preheat the oven to 375°F.
  2. Slice jalapeños in half and remove seeds.
  3. In a bowl, mix sausage, cream cheese, and cheddar cheese.
  4. Stuff jalapeño halves with the sausage mixture.
  5. Wrap each stuffed jalapeño with bacon and secure with toothpicks.
  6. Place on a baking sheet and bake for 25-30 minutes until the bacon is crispy.
