Ingredients

- 3 pounds chuck roast
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, chopped
- 1 cup potatoes, cubed
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
Instructions
- Preheat the oven to 300°F (150°C).
- Season the roast with salt and pepper.
- In a Dutch oven, heat oil over medium-high heat. Sear the roast on all sides until browned.
- Remove the roast and set aside. Add onions and garlic to the pot and sauté until soft.
- Return the roast to the pot. Pour in the beef broth and add carrots, potatoes, thyme, and rosemary.
- Cover and transfer to the oven. Cook for 3-4 hours until the meat is tender.
- Remove from the oven and let rest before slicing.
