A hearty and flavorful duck giblet hot pot, perfect for warming up on a chilly day.

- 1 whole duck, cut into pieces
- 1 cup duck giblets, cleaned
- 4 cups chicken stock
- 2 carrots, chopped
- 2 stalks of celery, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch (optional, for thickening)
- Salt to taste
Instructions
- In a large pot, heat oil over medium heat and add duck pieces, cooking until browned.
- Add giblets, carrots, celery, onion, garlic, and cook for a few minutes.
- Pour in the chicken stock and add bay leaves, thyme, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Stir in soy sauce and check seasoning, adding salt as needed.
- If a thicker consistency is desired, mix cornstarch with a little water and add to the pot, stirring until thickened.
- Serve hot with crusty bread or rice.
Notes
- For an extra flavor boost, you can add mushrooms or other vegetables.
- Feel free to adjust seasoning according to your taste.
