Description

A hearty and flavorful duck giblet hot pot, perfect for warming up on a chilly day.


Ingredients

  • 1 whole duck, cut into pieces
  • 1 cup duck giblets, cleaned
  • 4 cups chicken stock
  • 2 carrots, chopped
  • 2 stalks of celery, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt to taste


Instructions

  1. In a large pot, heat oil over medium heat and add duck pieces, cooking until browned.
  2. Add giblets, carrots, celery, onion, garlic, and cook for a few minutes.
  3. Pour in the chicken stock and add bay leaves, thyme, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1 hour.
  5. Stir in soy sauce and check seasoning, adding salt as needed.
  6. If a thicker consistency is desired, mix cornstarch with a little water and add to the pot, stirring until thickened.
  7. Serve hot with crusty bread or rice.

  • For an extra flavor boost, you can add mushrooms or other vegetables.
