Description

Deliciously tender gizzards cooked slowly in duck fat to enhance their rich flavor.


Ingredients

Scale
  • 1 pound duck gizzards
  • 2 cups duck fat
  • 4 cloves garlic, smashed
  • 2 bay leaves
  • 1 tablespoon fresh thyme
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Rinse the gizzards under cold water and pat them dry.
  2. In a large saucepan, melt the duck fat over low heat.
  3. Add the gizzards, garlic, bay leaves, thyme, salt, and pepper to the saucepan.
  4. Cover and simmer gently for about 2-3 hours, until the gizzards are tender.
  5. Once cooked, let them cool in the fat, then store in the refrigerator.
  6. When ready to serve, reheat gently and enjoy.

  • For best flavor, allow gizzards to sit in the fat for a few days before using.
