Ingredients

- 1 pound duck gizzards
- 2 cups duck fat
- 4 cloves garlic, smashed
- 2 bay leaves
- 1 tablespoon fresh thyme
- Salt to taste
- Black pepper to taste
Instructions
- Rinse the gizzards under cold water and pat them dry.
- In a large saucepan, melt the duck fat over low heat.
- Add the gizzards, garlic, bay leaves, thyme, salt, and pepper to the saucepan.
- Cover and simmer gently for about 2-3 hours, until the gizzards are tender.
- Once cooked, let them cool in the fat, then store in the refrigerator.
- When ready to serve, reheat gently and enjoy.
Notes
- For best flavor, allow gizzards to sit in the fat for a few days before using.
- Can be served as a snack or added to salads.
