- 1 large onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup potatoes, diced

- 1 teaspoon rosemary

- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery, sautéing until softened.
- Add the shredded duck confit and sauté for another 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the diced potatoes, thyme, and rosemary, then reduce heat and let simmer until potatoes are tender.
- Season with salt and black pepper to taste before serving.

- For added depth of flavor, consider adding a splash of white wine when sautéing the vegetables.
