Description

A rich and hearty duck confit soup that combines the flavors of tender duck, vegetables, and herbs.


Ingredients

  • 2 cups shredded duck confit
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup potatoes, diced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery, sautéing until softened.
  2. Add the shredded duck confit and sauté for another 5 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the diced potatoes, thyme, and rosemary, then reduce heat and let simmer until potatoes are tender.
  5. Season with salt and black pepper to taste before serving.
