- 6 large eggs
- 2 tablespoons bone marrow, roasted
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon chives, chopped
- 1 teaspoon smoked paprika
Instructions
- Hard boil the eggs by placing them in a pot and covering with cold water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes.
- Transfer the eggs to an ice bath and cool for 5 minutes. Peel the eggs and slice them in half lengthwise.
- Remove the yolks and place them in a mixing bowl. Add roasted bone marrow, mayonnaise, Dijon mustard, salt, and pepper. Mash together until smooth.
- Fill the egg whites with the yolk mixture using a spoon or piping bag.
- Sprinkle with chives and smoked paprika before serving.
