Description

This rich and creamy no-bake cheesecake is perfect for those who love a decadent dessert without the fuss of baking.


Ingredients

Scale
  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup sweetener of choice
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup sweetener of choice
  • 2 tsp vanilla extract
  • 1/4 cup sugar-free chocolate chips (optional)


Instructions

  1. In a mixing bowl, combine the almond flour, cocoa powder, sweetener, and melted butter. Mix until well combined.
  2. Press the mixture into the bottom of a springform pan to create the crust.
  3. In another bowl, beat the softened cream cheese with an electric mixer until smooth.
  4. Add the heavy cream, sweetener, and vanilla extract to the cream cheese and mix until light and fluffy.
  5. Pour the cream cheese mixture over the crust and spread evenly.
  6. Chill the cheesecake in the refrigerator for at least 4 hours or until set.
  7. Top with sugar-free chocolate chips before serving, if desired.
