- 5 pounds pork belly
- 1/2 cup kosher salt
- 1/4 cup brown sugar
- 1 tablespoon black pepper
- 2 teaspoons crushed red pepper flakes
- 1 tablespoon garlic powder
- 1 tablespoon thyme
Instructions
- In a bowl, mix together the salt, brown sugar, black pepper, red pepper flakes, garlic powder, and thyme.
- Rub the mixture all over the pork belly, making sure to cover it completely.
- Wrap the pork belly tightly in plastic wrap and place it in the refrigerator for 7 days.
- Flip the pork belly every couple of days to ensure even curing.
- After 7 days, remove the pork belly from the refrigerator and rinse it under cold water.
- Pat it dry and it is now ready to be cooked or smoked.

- For a deeper flavor, you can add additional spices to the curing mixture.
