Ingredients

  • 5 pounds pork belly
  • 1/2 cup kosher salt
  • 1/4 cup brown sugar
  • 1 tablespoon black pepper
  • 2 teaspoons crushed red pepper flakes
  • 1 tablespoon garlic powder
  • 1 tablespoon thyme


Instructions

  1. In a bowl, mix together the salt, brown sugar, black pepper, red pepper flakes, garlic powder, and thyme.
  2. Rub the mixture all over the pork belly, making sure to cover it completely.
  3. Wrap the pork belly tightly in plastic wrap and place it in the refrigerator for 7 days.
  4. Flip the pork belly every couple of days to ensure even curing.
  5. After 7 days, remove the pork belly from the refrigerator and rinse it under cold water.
  6. Pat it dry and it is now ready to be cooked or smoked.
