Deliciously crispy fish cakes perfect for Valentine’s Day.
Ingredients

- 2 cups cooked and flaked fish
- 1 cup mashed potatoes
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup chopped parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/2 cup flour
- 1/2 cup oil for frying
Instructions
- In a bowl, mix the flaked fish, mashed potatoes, egg, parsley, salt, and spices.
- Form mixture into patties and coat with flour.
- Heat oil in a pan over medium heat.
- Fry each patty until golden brown and crispy, about 4-5 minutes on each side.
- Drain on paper towels and serve hot.
Notes
- Serve with tartar sauce or a squeeze of lemon.
- These can be made ahead and frozen before frying.
