- 1 cup sauerkraut, drained and rinsed
- 1 cup shredded corned beef
- 1 cup Swiss cheese, shredded
- 1/4 cup Thousand Island dressing
- 10 egg roll wrappers
- Oil for frying
Instructions
- In a mixing bowl, combine sauerkraut, corned beef, Swiss cheese, and Thousand Island dressing.
- Place about 2 tablespoons of the filling onto each egg roll wrapper.
- Roll the wrappers tightly, sealing the edges with water.
- Heat oil in a deep frying pan over medium heat.
- Fry the egg rolls until golden brown and crispy, about 3-4 minutes on each side.
- Remove and drain on paper towels.
- Serve warm with additional Thousand Island dressing for dipping.
