- 4 pounds pork shoulder
- 1 cup Dijon mustard
- 1 cup unsalted butter
- 2 tablespoons honey
- 4 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 300°F (150°C).
- In a bowl, combine Dijon mustard, melted butter, honey, minced garlic, salt, pepper, and thyme.
- Rub the pork shoulder with olive oil and season generously with salt and pepper.
- Place the pork in a roasting pan and pour the mustard mixture over the top.
- Cover with foil and roast for 5-6 hours, until tender.
- Remove the foil and increase the oven temperature to 425°F (220°C) for the last 30 minutes to crisp the skin.
- Let rest for 20 minutes before slicing and serving.
