- 2 pounds russet potatoes
- 1 cup lamb fat
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary
Instructions
- Preheat the oven to 425°F (220°C).
- Peel and cut the potatoes into fries.
- In a large bowl, toss the fries with lamb fat, salt, pepper, and rosemary.
- Spread the fries out on a baking sheet in a single layer.
- Bake for 30-35 minutes until golden brown and crispy, flipping halfway through.
Notes
- For extra crispiness, soak the cut fries in cold water for 30 minutes before baking.
- Serve with your favorite dipping sauce for added flavor.
