- 4 bone-in, skin-on chicken thighs
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat oven to 425°F (220°C).
- In a bowl, mix Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
- In another bowl, beat eggs.
- Dip each chicken thigh in eggs, then coat with breadcrumb mixture.
- Place chicken thighs on a baking sheet and drizzle with olive oil.
- Bake for 35-40 minutes until golden and crispy.
- Let rest for 5 minutes before serving.
Notes
- For extra crispiness, broil the chicken for the last 2-3 minutes.
- Serve with a side of your favorite vegetables or a salad.
