- 4 fillets red snapper
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon tomato paste
- 1 cup heavy cream
- 2 teaspoons Creole seasoning
- Salt to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and bell pepper, sauté until softened.
- Stir in the garlic, cook for 1 minute.
- Add diced tomatoes and tomato paste, simmer for 5 minutes.
- Stir in the heavy cream and Creole seasoning, then return to a simmer.
- Add the red snapper fillets, cooking until they are opaque.
- Season with salt and garnish with parsley before serving.
