Description

Ingredients

  • 3 pounds chuck roast
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cups beef broth
  • 1 cup carrots, chopped
  • 1 cup onions, chopped
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large pot, heat olive oil over medium-high heat.
  3. Season the chuck roast with salt and pepper.
  4. Brown the roast on all sides in the pot.
  5. Add garlic, rosemary, and thyme, cooking for 1-2 minutes.
  6. Pour in beef broth, add carrots, onions, and bay leaf.
  7. Cover and transfer to the oven.
  8. Roast for about 3 hours or until tender.
  9. Remove from oven and let rest before slicing.

Notes

  • For added flavor, sear the roast a day in advance and let it marinate overnight.
