- 3 pounds chuck roast
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 2 cups beef broth
- 1 cup carrots, chopped
- 1 cup onions, chopped
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 325°F (165°C).
- In a large pot, heat olive oil over medium-high heat.
- Season the chuck roast with salt and pepper.
- Brown the roast on all sides in the pot.
- Add garlic, rosemary, and thyme, cooking for 1-2 minutes.
- Pour in beef broth, add carrots, onions, and bay leaf.
- Cover and transfer to the oven.
- Roast for about 3 hours or until tender.
- Remove from oven and let rest before slicing.
Notes
- For added flavor, sear the roast a day in advance and let it marinate overnight.
- Serve with mashed potatoes or crusty bread for a complete meal.
