Description

A delicious recipe for Cornish hens glazed with a sweet and tangy raspberry sauce.


Ingredients

  • 2 Cornish hens
  • 1 cup fresh raspberries
  • 1/2 cup sugar
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine raspberries, sugar, red wine vinegar, salt, and pepper over medium heat, stirring until the sauce thickens.
  3. Rub the Cornish hens with olive oil and thyme, then season with salt and pepper.
  4. Place the hens in a roasting pan and pour the raspberry sauce over them.
  5. Roast in the oven for 45-50 minutes until the juices run clear and the internal temperature reaches 165°F (74°C).
  6. Let rest for 10 minutes before serving.

  • For extra flavor, marinate the hens in the raspberry sauce overnight.
