- 2 Cornish hens
- 1 cup fresh raspberries
- 1/2 cup sugar
- 1/4 cup red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme
Instructions
- Preheat the oven to 375°F (190°C).
- In a saucepan, combine raspberries, sugar, red wine vinegar, salt, and pepper over medium heat, stirring until the sauce thickens.
- Rub the Cornish hens with olive oil and thyme, then season with salt and pepper.
- Place the hens in a roasting pan and pour the raspberry sauce over them.
- Roast in the oven for 45-50 minutes until the juices run clear and the internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before serving.
Notes
- For extra flavor, marinate the hens in the raspberry sauce overnight.
- Serve with roasted vegetables or a side salad.
