Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon salt

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 lemon (halved)


Instructions

  1. Prepare the Cornish hens by spatchcocking them.
  2. Rub the hens with olive oil and season with salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. Preheat your charcoal grill to medium-high heat.
  4. Place the hens on the grill, skin side down, and grill for about 25-30 minutes.
  5. Flip the hens and grill for another 15-20 minutes, or until they reach an internal temperature of 165°F.
  6. Remove from the grill and let them rest for 10 minutes before serving.
  7. Squeeze fresh lemon juice over the hens before serving.
