Instructions
- Prepare the Cornish hens by spatchcocking them.
- Rub the hens with olive oil and season with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Preheat your charcoal grill to medium-high heat.
- Place the hens on the grill, skin side down, and grill for about 25-30 minutes.
- Flip the hens and grill for another 15-20 minutes, or until they reach an internal temperature of 165°F.
- Remove from the grill and let them rest for 10 minutes before serving.
- Squeeze fresh lemon juice over the hens before serving.
