Description

A delectable recipe that combines tender short ribs with a rich coffee rub, served alongside flavorful beef tallow roasted radishes.


Ingredients

  • 2 pounds short ribs
  • 2 tablespoons coffee grounds
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons beef tallow
  • 1 pound radishes


Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix coffee grounds, brown sugar, paprika, garlic powder, onion powder, salt, and pepper.
  3. Rub the spice mixture all over the short ribs.
  4. In a large skillet, heat beef tallow over medium-high heat. Sear the short ribs on all sides until browned.
  5. Transfer the short ribs to a roasting pan and place in the oven.
  6. Prepare radishes by trimming and halving them. Toss with remaining beef tallow and season with salt.
  7. Add radishes to the roasting pan with the short ribs during the last 30 minutes of cooking.
  8. Cook for a total of 2.5 to 3 hours or until ribs are tender.
  9. Let rest for 10 minutes before serving.

Notes

  • For extra flavor, marinate the short ribs overnight with the rub.
  • You can serve with a side of mashed potatoes or a fresh salad.
