- 2 pounds short ribs
- 2 tablespoons coffee grounds
- 1 tablespoon brown sugar
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons beef tallow
- 1 pound radishes
Instructions
- Preheat oven to 325°F (163°C).
- In a bowl, mix coffee grounds, brown sugar, paprika, garlic powder, onion powder, salt, and pepper.
- Rub the spice mixture all over the short ribs.
- In a large skillet, heat beef tallow over medium-high heat. Sear the short ribs on all sides until browned.
- Transfer the short ribs to a roasting pan and place in the oven.
- Prepare radishes by trimming and halving them. Toss with remaining beef tallow and season with salt.
- Add radishes to the roasting pan with the short ribs during the last 30 minutes of cooking.
- Cook for a total of 2.5 to 3 hours or until ribs are tender.
- Let rest for 10 minutes before serving.
Notes
- For extra flavor, marinate the short ribs overnight with the rub.
- You can serve with a side of mashed potatoes or a fresh salad.
