A rich and flavorful dish featuring tender elk meat coated in a robust coffee crust, paired with sweet blackberries for a unique culinary experience.

Ingredients

Scale
  • 2 pounds elk steak
  • 1/4 cup ground coffee
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh blackberries
  • 2 tablespoons balsamic vinegar

Instructions

  1. In a bowl, mix ground coffee, brown sugar, paprika, salt, and pepper.
  2. Rub the coffee mixture over the elk steak, ensuring it’s evenly coated.
  3. Preheat the grill to medium-high heat.
  4. Grill the elk steak for about 4-5 minutes on each side for medium-rare.
  5. While the steak is cooking, combine blackberries and balsamic vinegar in a small saucepan and simmer until slightly thickened.
  6. Remove the steak from the grill and let it rest for a few minutes before slicing.
  7. Serve the elk slices topped with the blackberry balsamic sauce.

Notes

  • For best results, let the elk steak marinate in the coffee rub for a few hours or overnight.
