- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup breadcrumbs
- 2 large eggs
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup bacon bits
- 1/2 cup flour
- 1 cup oil for frying
Instructions
- Preheat oil in a deep skillet over medium heat.
- Season shrimp with salt and pepper.
- Dredge shrimp in flour, then dip in beaten eggs, and coat with a mixture of breadcrumbs and shredded coconut.
- Fry shrimp in hot oil until golden brown, about 3-4 minutes per side.
- Remove shrimp and place on paper towels to drain.
- Sprinkle bacon bits over the fried shrimp before serving.
Notes
- For extra flavor, marinate shrimp in lime juice before breading.
- Serve with a sweet chili dipping sauce.
