Description

A delicious combination of crispy coconut-fried shrimp and savory bacon dust.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup bacon bits
  • 1/2 cup flour
  • 1 cup oil for frying


Instructions

  1. Preheat oil in a deep skillet over medium heat.
  2. Season shrimp with salt and pepper.
  3. Dredge shrimp in flour, then dip in beaten eggs, and coat with a mixture of breadcrumbs and shredded coconut.
  4. Fry shrimp in hot oil until golden brown, about 3-4 minutes per side.
  5. Remove shrimp and place on paper towels to drain.
  6. Sprinkle bacon bits over the fried shrimp before serving.

Notes

  • For extra flavor, marinate shrimp in lime juice before breading.
  • Serve with a sweet chili dipping sauce.
