Description

Deliciously crispy coconut-fried shrimp topped with a savory bacon dust.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 6 slices bacon, cooked and crumbled
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • Vegetable oil, for frying


Instructions

  1. Preheat the oil in a deep-fryer or large pot to 350°F (175°C).
  2. Set up a dredging station with flour, beaten eggs, and a mixture of coconut and panko breadcrumbs.
  3. Dredge each shrimp in flour, dip in egg, and then coat with the coconut and panko mixture.
  4. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side.
  5. Remove shrimp and place on paper towels to drain excess oil.
  6. Mix crumbled bacon with salt, pepper, and paprika; sprinkle over the fried shrimp before serving.

Notes

  • For extra crunch, use fresh coconut instead of dried.
  • Adjust seasoning to taste.
