- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 6 slices bacon, cooked and crumbled
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- Vegetable oil, for frying
Instructions
- Preheat the oil in a deep-fryer or large pot to 350°F (175°C).
- Set up a dredging station with flour, beaten eggs, and a mixture of coconut and panko breadcrumbs.
- Dredge each shrimp in flour, dip in egg, and then coat with the coconut and panko mixture.
- Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side.
- Remove shrimp and place on paper towels to drain excess oil.
- Mix crumbled bacon with salt, pepper, and paprika; sprinkle over the fried shrimp before serving.
Notes
- For extra crunch, use fresh coconut instead of dried.
- Adjust seasoning to taste.
