- 4 veal cutlets
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 2 lemons, cut into wedges
Instructions
- Prepare the veal by pounding it to 1/4 inch thickness.
- Set up a breading station with flour, beaten eggs, and a mixture of breadcrumbs and Parmesan cheese.
- Dredge each cutlet in flour, then dip in eggs, and finally coat with the breadcrumb mixture.
- In a large skillet, heat olive oil over medium-high heat.
- Fry the breaded cutlets for about 3-4 minutes on each side until golden brown.
- Transfer the cutlets to a plate and serve with lemon wedges.
Notes
- For extra flavor, season the flour with garlic powder or Italian herbs.
- Rest the fried cutlets on paper towels to absorb excess oil.
